This omelette preparation is quite different from our normal process. Fried potatoes are also a main ingredient in this omelette. I tried this as part of an event in my kid’s school based on Spanish theme.
- Eggs – 2
- Potato – 1, medium
- Onion – 1, small
- Olive oil
- Slice the potatoes into wedges of thin size. Fry these in olive oil for 5 minutes and add sliced onion. Cook till it becomes soft and potatoes are cooked. Drain the oil and keep the fried onion and potato aside.
- Whisk the eggs in a bowl with little salt. Add the onion and potato and mix well.
- Heat oil in a pan and add the egg mix evenly and cook for 5-10 minutes.
- Flip the omelette and cook the other side.
