This is a simple recipe of chutney with tomato and coconut. You can serve it with dosa, idli and rice. It is an easy side dish to prepare.
- Tomato – 2
- Onion – 1
- Coconut – 1/2 cup
- Garlic – 4 flakes
- Ginger – a small piece
- Dry red chili – 4
- Curry leaf – 1 sprig
- Heat oil in a wok , roast the red chilies for some time.
- Add onion, ginger, garlic and curry leaves and saute. When onion becomes golden brown, add chopped tomato pieces, salt and mix well. Cover and cook.
- When the tomatoes are mushy and cooked well, turn off the fire, add coconut and mix.
- When it cools down, grind it to a smooth paste without adding water.
