Squid / Calamari is a seafood item which is very tasty and delicious. Squid roast is usually prepared with this. Here it is prepared with coconut as a side dish for rice. We usually do this preparation with small fish like anchovy or sardines. Squid is rich in protein, vitamin and minerals. You should be careful while cooking, because if you overcook this, it will turn into a rubbery consistency.
- Squid/koonthal – 250 gram
- Grated coconut – 1 cup
- Shallots – 1/2 cup
- Green chili – 3
- Ginger – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Chili powder – 1/4 teaspoon
- Kudampuli/Gambooge – 3 pieces
Clean and cut the squid into thin circles.Soak the gambooge in a cup of water and keep aside.
Combine Squid rings, grated coconut , chopped green chili,ginger, turmeric powder, chili powder, salt and mix it well with your hands.
Heat oil in a pan and add mustard seeds. when they pop up add curry leaves, chopped shallots and saute well.
Add the squid coconut mix along with 1/2 cup water, gambooge and simmer it covered for 20 minutes or until it is done.
