Madhura Seva

A teatime snack from Kerala which is fried sweetened chickpea flour noodles. You can make it sugar coated or simply fried in oil. Lot of childhood memories connected with this snack. Mom used to make it for my sisters when they were away from home for studies. When they come for vacation one of the items packed for them was this sweet snack. First you have to prepare the dough and using the idiyappam mould you can make it. There will be different attachments comes with the idiyappam mould. Each of them will be in different shape for different use.

Ingredients

  • Besan/chickpea flour – 2 cups
  • Water – 1/2 cup
  • Salt – a pinch

For sugar syrup

  • Sugar – 3/4 cup
  • Water – 1/4 cup
  • Cardamom powder -1/2 teaspoon

Preparation

  1. Mix besan with salt and add water little by little to make a smooth dough.Keep the dough covered.
  2. Heat oil in a deep wok on medium flame.Fill the idiyappam maker with dough, fitted with the big hole attachment, with the dough and close the lid.
  3. Press the dough into the hot oil, until it covers the entire oil. Flip and turn both sides using a slotted spoon.
  4. Drain on paper towel and repeat the same till you finish the dough.Switch off the flame and then break the fried one into small pieces and keep aside.
  5. Melt sugar in water and boil it till it reaches a one thread consistency, add the cardamom powder.
  6. Add the broken pieces in syrup and toss well.Switch off flame and keep mixing until it starts to get coated to the pieces.
  7. When slightly cooled, add 2 tablespoon powdered sugar on top of it and toss gently. Cool completely and store in air tight containers.
