This might be the first thing all of us tried and succeeded in kitchen. Depends on the cuisine, the taste and preparation varies. This is a Kerala recipe of omelette. It is a good accompaniment with hot boiled rice, coconut chammanthy and moru curry
- Egg – 2
- Green Chilly – 1
- Shallots – 5
- Ginger – 1/4 teaspoon
- Coconut – 2 tablespoon
- Curry leaves – 1 sprig
- Finely chop the onion,ginger and chilly.
- Break the egg and add the chopped onion, ginger,chilly, grated coconut, curry leaves(if you want you can chop curry leaves too) and salt. Beat it well.
- Heat oil in a pan and pour the egg mixture and slowly spread it. When one side of it is cooked well, turn it upside down and cook the other side well.
