Even though bitter gourd has lot of nutrients, all of us won’t be like this fruit because of its bitterness. You can marinate the bitter gourd slices with salt and later squeeze out the juice to reduce the bitter taste. Alternatively you can soak it in tamarind juice for some time. Usually we prepare stir fry / mezhukkupuratti with this by cutting into thin slices. But this is a thoran recipe and you won’t be knowing the bitterness much in this recipe.
- Bitter gourd – 1 or 2
- Ginger – small piece
- Coconut – 1/2 cup
- Shallots – 5
- Green chilly – 3
- Curry leaves
- Finely chop the bitter gourd.
- Add grated coconut, sliced shallots, curry leaves, green chilly and chopped ginger into it.
- Heat oil in a pan and splutter mustard seeds. Add the bitter gourd and salt into this.
- Cook in low flame till it is done.
