Cauliflower Egg Stir fry

Gobi

Usually we prepare Gobi Manchurian or Gobi 65 kind of dishes with this vegetable. Here I have used it as a side dish for roti or rice. For a twist i have added scrambled egg also in this, which makes it even more tasty.

Ingredients

  • Cauliflower (chopped) – 1 cup
  • Onion(finely chopped) – 1
  • Green Chilly – 3
  • Turmeric powder – ¼ tsp
  • Grated Coconut – ¼ cup
  • Mustard seeds – ½ tsp
  • Red Chilly – 2
  • Egg – 2
  • Salt – to taste
  • Oil – 2 tsp
  • Curry leaves- few

Preparation

  1. Cook cauliflower in little water, turmeric powder and salt.
  2. Beat the eggs and keep aside.
  3. Heat oil in a pan and allow mustard seeds and red chilly to splutter.
  4. Add chopped onion and green chily and saute well.
  5. When Onion turns transparent, add the beaten egg, grated Coconut and salt and stir continuously.
  6. Add Cooked Cauliflower along with Curry leaves and saute well.
  7. When it becomes dry, remove from fire.
