Koorka Mezhukkuperatti / Chinese Potato Stir Fry

Koorka or chinese potato stir fry is a very tasty vegetarian side dish you can serve with rice. In Kerala style preparation, coconut bits are also added with this. It will enhance the taste. But I didn’t add it here. It can be added in beef curry also. The cleaning is the most tedious task here. The method used in old generation was, it will keep in a sack and tie it properly, then beat hardly, so that the skin will be removed from it.

  • Chinese potato – 1 cup
  • Shallots – 1/2 cup, sliced
  • Turmeric powder – 1/4 teaspoon
  • Red chili flakes- 1 teaspoon

  1. Heat oil in a pan and add mustard seeds. Once they crackle, add the sliced shallots, curry leaf and fry till they are brown.
  2. Add the chopped chinese potato, turmeric powder and salt. Stir well and cover and cook till it becomes soft.
  3. Once it is almost cooked, add red chili flakes and little more oil and fry them in low flame, stirring them occasionally till they are slightly brown.
